Whale — Sparkling Chardonnay

Rich and bright — the generosity California Chardonnay is known for. Aromatics of Gravenstein apple, pear, and yuzu citrus lead into an unctuous, mouthfilling palate with zippy lemon curd and a creamy mousse.

Winemaking: Barrel-aged, malo-complete, then bottle-fermented in the traditional method. Base wines fermented with native yeast and aged in neutral barrels for up to 30 months (2022 vintage), gaining a creamy texture on top of Chardonnay's natural brightness. Assembled across three vintages — 14% 2022, 60% 2023, 26% 2024 — from San Benito, Santa Cruz, and Sonoma County. Hand-disgorged to an easy-open crown cap.
