Mackerel — Pét Nat Pinot Grigio
A fresh, refined example of pétillant naturel. Bottled during harvest with wild yeast, showing lovely yeast-derived flavors characteristic of bottle aging. A cool vintage and early pick give the wine abundant energy and lightness. Hand-disgorged after almost two years on sediment to build texture and flavor.
Vineyard: Vista Verde Vineyard, Paicines (San Benito County).
Winemaking (ancestral): Grapes held in contact with juice for 2 days, pressed, then fermented with wild yeast until a sufficient level of sugar remains. Bottled unfinished and left to complete fermentation in bottle — trapping the gas that makes the wine sparkle. Rested 21 months before disgorging. Zero dosage, crown cap.
