Urchin — Sparkling Rosé

Fun and fresh with aromas of wild strawberry and guava. Pairs well with a wide range of fresh foods — including uni (sea urchin).

Vineyards: Cool-climate Pinot Noir and Chardonnay from Santa Cruz Mountains and San Benito County.

Winemaking: Whole-cluster pressed, juice settled for purity and focus, then barrel-fermented with native yeast at 60–70°F for three weeks. Sediment held without sulfur until bottling. Traditional method in bottle, light dosage, crown cap closure.

Variety: 92% Pinot Noir · 8% Chardonnay · Vintage: 2023 · 12% ABV
