A proper traditional-method sparkling orange wine with big flavors and real texture. Packed with fresh apricot and white flowers (jasmine). Energetic bubbles and mild tannins lend structure without overpowering. Pairs exceptionally with spicy Chinese food, fried chicken, or any fatty, bold dish.

Winemaking: Albariño and Pinot Gris fermented naturally on skins for 10 days using submerged cap to limit harsh tannins — behaves like a red but carries the aromatic energy of a white. Base wine finishes in barrel, goes through native malolactic, and ages 9 months before assemblage. After six months on bottle yeast, riddled and hand-disgorged. Light dosage, crown cap closure.
